  • 100 Ml Elderflower Cordial (100g)
  • 100g Pomegranate, seeds extracted
  • 2 X 750ml bottles Sparkling Wine (1500g), chilled


    1. Put 2 teaspoons elderflower cordial into each of 10 champagne glasses. Divide pomegranate seeds evenly between glasses (about 2 teaspoons each).
    2. Pour sparkling wine into each glass. Stir gently and serve.

    Mish Tips

    • Elderflower cordial is available in the cordial aisle of the supermarket. If you can’t find it try replacing it with a good-quality raspberry cordial.
    • You will need about ½-1 whole pomegranate to get 100g seeds. To extract seeds from a fresh pomegranate, cut into large pieces and submerge in a large bowl of water. Use your fingers to prise out seeds. The white membrane will float and seeds will sink to the bottom. Alternatively, you can sometimes buy pomegranate seeds in small containers in the fruit and vegie aisle in the supermarket.
