Member recipe: Thanks Pinklozza for sharing this great vegetarian recipe. “This was going to be a lasagne but I ran out of lasagne sheets, so I modified it slightly. My friends absolutely rave about this and are always begging for me to make it. The tofu takes the place of the cheese and has a similar texture to ricotta. The mushrooms and eggplant add a meaty sort of texture to the dish. No one has ever complained that it is missing cheese or meat. In fact they prefer this over regular lasagne!”
