Classic Aussie ANZAC Biscuit Recipe… AND it’s Vegan!

Did you know the recipe for Australia’s fave biscuit was created during wartime and didn’t contain egg or butter so it wouldn’t spoil on the journey to ANZAC troops overseas?

ANZAC Biscuit Recipe

  • 1 1/2 cups rolled oats (150g)
  • 1/2 cup plain flour (75g)
  • 1/2 cup desiccated coconut (45g)
  • 1 teaspoon ground cinnamon (4g)
1/4 cup brown sugar (55g)
  • 1/4 cup golden syrup (85g)
  • 1/4 cup olive oil (60g)
1 teaspoon bicarbonate of soda (5g)


  1. Preheat oven to 180 C. Place oats, flour, coconut, cinnamon and brown sugar in a large bowl, stir to combine.

  2. Place golden syrup, oil and 60ml (¼ cup) water in a medium saucepan. Heat, stirring, over a medium heat until all ingredients are well combined. Stir in bicarbonate of soda (mixture will bubble and foam), remove from heat.

  3. Add wet mixture to the dry ingredients, stir until well combined. With slightly wet hands, roll tablespoons of the mixture and place 3cm apart on a prepared baking tray. Flatten slightly with a fork dipped in flour.

  4. Bake for 10 minutes, or until golden brown. Remove from oven and set aside to cool completely on the tray. Store in an airtight container.

Mish Tips

  • For a higher fibre option, substitute the plain flour for wholemeal flour.

    You must have something wrong with your taste buds cos i have just made a batch and they are really delicious, nice and soft not hard at all.

    Great! I have just made this cruelty free Anzac Biscuits and they are delicious. As I didn’t have CS. I used half Treacle and half Rice Syrup instead, everything else the same. I cannot stop eating them!!! I will make them often now.

    These Anzac cookies worked out well for me! Soft and sweet and darker than usual – I think there is extra cinnamon than is traditional. They would be great with wholemeal flour. I love to see vegan recipes for 12WBTers!

    HI Spike, you said you made this Anzac biscuit recipe and it was delicious, I am interested in making it – I am worried that the oats may be too big and my son won’t eat them – do you think I can crush the oats so they blend better? Thanks

    These were great, went down well here! I even managed to forget to put in the oil and they worked and were 20 calories lighter!

    Fantastic recipe! I used malt Rice syrup instead of golden and also added cranberries. I was worried they would fall apart as I pressed them on the tray, but they tripped in size and we’re crunchy, but soft in the middle. Thanks for sharing 🙂
