Chicken & Broccolini Laksa

Ingredients

  • 1g olive oil spray
  • 1 tablespoon laksa paste
  • 2 cups chicken stock
  • 1 can light coconut flavoured evaporated milk
  • 200g raw, lean chicken breast, thinly sliced
  • 1 bunch broccolini
  • 120g bean shoot
  • 1/4 bunch mint
  • 1/4 bunch fresh coriander
  • 1 medium lime, cut into wedges to serve

Method

Spray the base of a large saucepan with olive oil and heat over medium heat. Add the laksa paste and cook, stirring, for 1-2 minutes or until fragrant.

Add the chicken stock and coconut flavoured milk and stir to combine. Bring to a very gentle simmer over medium heat. Add the chicken and broccolini stems (cut any thicker stems in half lengthways). Cook for 5 minutes, add the broccolini florets in the last 2 minutes and simmer until the chicken is cooked through and the broccolini is tender.

Divide the laksa mixture between the bowls. Top with the bean sprouts, mint and coriander. Serve with the lime cheeks.

  2. Why do you use the evaporated milk as It’s got more calories than the light coconut milk?

    1. Evaporated milk has less saturated fat (the bad stuff that helps cause heart disease). Yes we are about calorie control, but we want to do it in a healthy way!

  3. Sounds awesome and tasty. And no yucky grainy carbs. Since I’ve taken grains out of my diet and consumed more veggies and fruits for my carbs I’ve dropped like nothing else. Plus my hunger has seemed to be in control. First time ever!
